So...what happens when the school year is done? Should my character wait to start school next year or should I start playing now?

You are fine to start playing now. The end of the school year just means that the summer plots start. We usually have a summer plot, and probably will this year too. Since your character is a first year, they will be a second year next year. You must keep in mind that your character has existed for as long as you said they have in you app. Regardless, you should start rping now so that you have the hang of things and are able to get involved in the summer plots.

I don't mean to be a pain in the butt, but what are the summer plots like? Do all the students stay at Hogwarts or go home or what?

Nope, they go wherever it is that they go in the summer. The summer plots are sometimes carry overs from the site wide plots, but there's a lot of individual plotting that goes on. :)
